Cuisine de Cochon

Every so often, we share a locally reared pig and prepare it together with friends and neighbours. This is a rural tradition here and we love to participate. We’ve learn’t so much about French farmhouse cooking; in our minds this is one of the high points of French ‘cuisine’ and what we adore most is the reciprocal open-ness to exchange ideas and recipes and challenge traditions: paté de campagne, black pudding, paté de tête, English sausages…
